INGREDIENTS:
- 2 cups sourdough starter
- 1 cup frozen blueberries
- 1/2 cup + 1 tbsp sugar
- 1/2 tsp salt
- 1 cup flour
- 1 tsp cinnamon
- 1/3 cup butter, melted
- 1 egg, beaten
- 1 tsp. baking soda
- Preheat oven to 350ยบ F.
- Combine frozen blueberries and 1 tbsp sugar in a bowl. Microwave for 30 seconds. If still frozen, stir and microwave for another 15 seconds or so.
- Combine the sourdough starter, blueberries, egg and butter in a bowl; set aside.
- Combine all remaining ingredients in a second bowl. Combine with the wet ingredients and mix thoroughly.
- Pour into an 8" round non-stick cake pan.
- Bake for 40 minutes or until center of the cake is set.
- Allow to cool for 30 minutes before serving.
